Having been to Cuba recently I have all things Cuban on the brain. When Colada Shop opened I knew I had to check it out right away; we have few Cuban options in the city and this one seemed promising. And it did not disappoint! While I expected great Cuban food what I did not expect was finding one of my favorite sandwiches in the city. The Veggie Cuban is a modern twist on traditional Cuban sandwiches; it comes on doughy Cuban bread that is crispy from toasting, and has bright, bold flavors from cilantro aioli, mojo marinated mushrooms, and mustard.
