“We use olive oil, sugar and a combination of flours in our dough,” says co-founder Andrew Dana. “Adding fat adds a little crispness.” The Green Monster eschews marinara sauce for pesto and comes topped with zucchini, kale, feta and mozzarella. “We’re absolutely not traditional Italian,” Dana says. “We never have been and we never will be.”
